Ingredients
- 1 pumpkin, chopped & peeled
- 1 medium onions, chopped
- 2 teaspoon salt
- 1 teaspoon sugar
- Olive oil
- water
- sour cream
- Basil
Directions
- To start with the soup, heat olive oil over medium heat in a large iron skillet or heavy saucepan
- Saute until onion with basil, salt and sugar is tender, approximately 5 minutes
- Pour water in the pot and salt to heat pumpkin puree
- When the puree is ready add the onions and add water to give the texture to the soup
- Cook for 5 minutes and stirring
- Serve with sour cream and basil.
