Pumpkin Soup



Ingredients
  • 1 pumpkin, chopped & peeled
  • 1 medium onions, chopped
  • 2 teaspoon salt
  • 1 teaspoon sugar
  • Olive oil
  • water
  • sour cream 
  • Basil

Directions

  1. To start with the soup, heat olive oil over medium heat in a large iron skillet or heavy saucepan
  2. Saute until onion with basil, salt and sugar is tender, approximately 5 minutes
  3. Pour water in the pot and salt to heat pumpkin puree
  4. When the puree is ready add the onions and add water to give the texture to the soup
  5. Cook for 5 minutes and stirring 
  6. Serve with sour cream and basil.
